Cod cooked in the pan with lemon aioli

This delicious pan-seared cod cooks very quickly when paired with a simple homemade lemon aioli. Serve with couscous and oven-roasted veggies for a quick and satisfying evening dinner.

 Ingredients:

Lemon Aioli:

  1. 2 tablespoons mayonnaise
  2. 1/2 teaspoon lemon zest
  3. 1 teaspoon lemon juice, or more to taste
  4. 1 teaspoon finely grated garlic
  5. salt and freshly ground black pepper to taste
  6. 1 teaspoon milk, or more as needed

Cod:

  1. 4 (6 ounce) cod filets
  2. 1 tablespoon olive oil
  3. 1 tablespoon unsalted butter
  4. 1 teaspoon Italian seasoning

To make lemon aioli, combine mayonnaise, grated garlic, lemon zest, and lemon juice in a small bowl. Use salt and pepper to season to taste. Use milk to thin to a drizzle-worthy consistency.
