Better than P.F. Chang's, Asian Chicken Lettuce Wraps! A great dinner that is easy, quick (less than 30 minutes), and healthful! Free of dairy and gluten!
Ingredients:
- 1 pound ground chicken
- 1 Tablespoon peanut oil
- ½ onion (finely diced)
- ½ Tablespoon minced garlic
- 1 cup red or green pepper (finely diced)
- 8 ounces water chestnuts (drained & finely diced)
For the sauca.
- 3 Tablespoons soy sauce*
- 3 Tablespoons hoisin sauce**
- 1 Tablespoon sesame oil
- 1 Tablespoon rice vinegar
- 1 Tablespoon peanut butter
- 1 Tablespoon honey
- 2 teaspoons sweet chili sauce
- ½ teaspoon garlic powder
- ¼ teaspoon powdered ginger
To serve.

Mix the sauce ingredients thoroughly with a whisk. It might be necessary to microwave the mixture for 30 to 60 seconds to melt the tougher peanut butter and make sure everything is thoroughly combined.
When the peppers are starting to go tender, add the water chestnuts and peppers and simmer for about five minutes.

In a skillet, heat two tablespoons of peanut oil. Add minced garlic, onion, and ground chicken once heated.Step:No:03
Simmer for 5 to 10 minutes, or until the chicken is browned and the onions are transparent.Step:No:04
When the peppers are starting to go tender, add the water chestnuts and peppers and simmer for about five minutes.

Once the chicken and vegetables are well covered and heated through, add the sauce and simmer over low heat.Step:No:06
