easy spinach stuffed chicken

 This recipe for spinach-stuffed chicken breasts makes a tasty and eye-catching meal. After seasoning with a homemade rub, two varieties of cheese, herbs, and spices are stuff into chicken breasts. They're so tasty that you'll want to prepare them often.

Ingredients:

  1. 3 lbs chicken breasts (4 to 6 breasts)

Spice Rub

  1. 2 teaspoons Garlic powder
  2. 1 teaspoon sea salt
  3. 1 teaspoon Italian seasoning
  4. ½ teaspoon paprika
  5. ½ tsp onion powder
  6. ¼ teaspoon pepper
  7. 2 Tablespoons olive oil

Goat Cheese & Spinach Filling

  1. 8 oz goat cheese
  2. 2 Tablespoons mayonnaise
  3. 1 Tablespoon minced garlic
  4. ½ teaspoon sea salt
  5. ½ cup parmesan cheese
  6. 1 cup baby spinach finely diced
  7. 2 Tablespoons onions minced


Instructions:

Set oven temperature to 425°F.

Grease a 9 x 13" baking dish lightly and keep it aside.

make the filling.

  1. To a medium-sized bowl, add the goat cheese, mayonnaise, minced garlic, sea salt, parmesan cheese, spinach, and onion. Mix everything together. Put aside.

make the rub with spices.

  1. Mix the sea salt, paprika, onion powder, garlic powder, Italian seasoning, and pepper in a small bowl. Mix everything together. 

Get the chicken breasts ready.

  1. Cut 4 large (3 lb) chicken breasts.

  2. Next, make a ¾-inch slit halfway through the chicken breast with a sharp knife to create a "pocket"; do not cut all the way through to the other side to prevent the contents from spilling out.

  3. Put chicken breasts inside and season.

  4. Next, fill each chicken breast with ¼ of the filling.

  5. Using a toothpick, seal the "pocket" so that it isn't protruding on either side of the breast.

  6. Use the spice mixture to season the breasts on both sides. 

Brown the Chinken.

  1. In a large, nonstick skillet, heat 2 TBS olive oil until shimmering.

  2. When the chicken breasts are golden brown, grill them for four to five minutes on the first side.

  3. After carefully turning the chicken over, grill it for another four to five minutes, or until it is golden brown.

Bake the Chinken.

  1. Place the browned breasts in the 9 x 13" baking dish that has been prepared. arranging them so they don't overlap in an even layer.

  2. Bake for 15 to 20 minutes, or until the internal temperature reaches 165 degrees F, in a preheated oven.

Serve.

  1. When the chicken is done roasting, take it out of the oven and allow it to cool a little before serving.
