This recipe for spinach-stuffed chicken breasts makes a tasty and eye-catching meal. After seasoning with a homemade rub, two varieties of cheese, herbs, and spices are stuff into chicken breasts. They're so tasty that you'll want to prepare them often.
Ingredients:
- 3 lbs chicken breasts (4 to 6 breasts)
Spice Rub
- 2 teaspoons Garlic powder
- 1 teaspoon sea salt
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ tsp onion powder
- ¼ teaspoon pepper
- 2 Tablespoons olive oil
Set oven temperature to 425°F.
Grease a 9 x 13" baking dish lightly and keep it aside.

- To a medium-sized bowl, add the goat cheese, mayonnaise, minced garlic, sea salt, parmesan cheese, spinach, and onion. Mix everything together. Put aside.

Get the chicken breasts ready.
- Cut 4 large (3 lb) chicken breasts.
- Next, make a ¾-inch slit halfway through the chicken breast with a sharp knife to create a "pocket"; do not cut all the way through to the other side to prevent the contents from spilling out.
- Put chicken breasts inside and season.
- Next, fill each chicken breast with ¼ of the filling.
- Using a toothpick, seal the "pocket" so that it isn't protruding on either side of the breast.
- Use the spice mixture to season the breasts on both sides.
Brown the Chinken.
- In a large, nonstick skillet, heat 2 TBS olive oil until shimmering.
- When the chicken breasts are golden brown, grill them for four to five minutes on the first side.
- After carefully turning the chicken over, grill it for another four to five minutes, or until it is golden brown.
Bake the Chinken.
- Place the browned breasts in the 9 x 13" baking dish that has been prepared. arranging them so they don't overlap in an even layer.
- Bake for 15 to 20 minutes, or until the internal temperature reaches 165 degrees F, in a preheated oven.
Serve.
- When the chicken is done roasting, take it out of the oven and allow it to cool a little before serving.
