chicken gyros with tzatziki sauce

 This bowl has it all! The crunch of the tomato cucumber salad, the thin slips of bitey red onion, the golden crisped air fryer chicken cut into tender little strips, a big pile of perfectly chewy Banza, and a dollop of tangy calabrian chile sauce on top.

Ingredients:

Tomato Cucumber Salad.

  1. 1 English cucumber, cut into chunks (about 1 1/2 cups)
  2. 1 pint cherry tomatoes, cut into halves (about 1 1/2 cups)
  3. a small chunk of red onion, thinly sliced on a mandoline
  4. a small bundle of parsley, chopped (about 1/4 cup)
  5. 1 tablespoon white vinegar
  6. 2 tablespoons olive oil
  7. salt and freshly ground black pepper to taste

Calabrian Chile Sauce.

  1. 1/4 cup mayo
  2. 1/4 cup Greek yogurt
  3. 2–3 individual Calabrian chiles, stems discarded, smashed / minced (I use a jarred variety)
  4. 1 clove garlic, grated
  5. a splash of castelvetrano olive brine (optional, see notes)
  6. salt to taste

The Rest.

  1. For protein, I use a batch of this ridiculously good Air Fryer Chicken(For a vegetarian alternative, this Air Fryer Tofu works beautifully too!)
  2. For a carb, I love the Banza Rice Mix for this – it doesn’t really make sense but I enjoyed the tomato chipotle variety!




Instructions:

Step:No:01

Toss the ingredients for the tomato cucumber salad together. Taste and make adjustments! (If you would like to prepare ahead of time, keep the chopped tomatoes, cucumbers, and red onion in separate refrigerator-safe containers until right before serving, without adding any liquid.)

Step:No:02

Sauce: Combine the ingredients in a bowl. Taste and make adjustments! This is really good for several days in the refrigerator.

Step:No:03

Prepare the chicken and banza (or your preferred type of carb).

Step:No:04

You're through! Delicious! Put together and serve! Oh my! Excellent.
