Rice Casserole with Chicken Fajita

 This flavorful rice and chicken casserole comes together quickly and is packed with flavor. Toasting the rice is a very simple technique to give a subtle nuttiness and additional flavor depth, so don't skip it. Add your favorite topping, such as diced tomatoes, sour cream, or shredded Cheddar cheese.

Ingredients:

  1. 1 ¼ cups long-grain white rice
  2. ½ cup chopped fresh cilantro leaves
  3. 2 limes, zested and juiced
  4. 1 ½ pounds boneless, skinless chicken breasts, cut into 1/2 inch slices
  5. 2 small bell peppers, thinly sliced
  6. 1 large red onion, thinly sliced
  7. 2 tablespoons fajita seasoning
  8. 2 tablespoons olive oil
  9. 1 ½ teaspoons kosher salt
  10. ½ teaspoon ground black pepper
  11. 1 ½ cups chicken broth
  12. 1 lime, cut into wedges
