Millionaire Casserole with Chicken

 This thick, creamy, and extremely flavorful chicken dish is worth a million dollars. You can't stop eating it because it's so amazing! Using rotisserie chicken in this dish keeps things simple and the secret to its creamy texture is the cottage cheese. Add some steamed broccoli or peas if you like. Serve with pasta or a simple salad.

Ingredients:

  1. 1 (10.5 ounce) can cream of chicken soup
  2. ½ cup cottage cheese
  3. ½ cup sour cream
  4. 4 ounces cream cheese, at room temperature
  5. 1 ½ teaspoons Creole seasoning
  6. ½ teaspoon onion powder
  7. 1 teaspoon garlic powder, divided
  8. 5 cups shredded rotisserie chicken
  9. 1 tablespoon chopped fresh parsle
  10. 30 buttery round crackers (such as Ritz)
  11. 4 tablespoons unsalted butter, melted
  12. 1 cup shredded mozzarella cheese
  13. 1 teaspoon sliced scallions, or to taste

 

Directions:

Step: No:01

Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius)

In a medium bowl, whisk together cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon garlic powder until smooth

Add the chicken and parsley and fold until coated evenly

In a medium bowl, mix crackers, melted butter, and the remaining half teaspoon of garlic powder.

Evenly spoon chicken mixture into 9- or 11-inch square baking dishes. After equally scattering mozzarella, cover with the cracker mixture.
