Best Healthy tuna pasta bake

Taking only ten minutes to prepare, this cheesy tuna pasta bake is a great dinner option for hectic nights and will satisfy the whole family!

Ingredients:

  1. 250g spelt fusilli (spiral) pasta
  2. 2 tsp olive oil
  3. 4 anchovies, drained, finely chopped
  4. 1 brown onion, finely chopped
  5. 200g button mushrooms, sliced
  6. 2 garlic cloves, crushed
  7. 2 x 400g cans chopped tomatoes
  8. 1 lemon, rind finely grated
  9. 1/2 cup fresh continental parsley leaves, finely chopped
  10. 200g Bulla Cottage Cheese
  11. 425g can Coles Tuna In Spring water, drained, flaked
  12. 2 large tomatoes, thinly sliced
  13. 20g (1/4 cup) finely grated parmesan
  14. 150g mixed salad leaves


Instructions:

Step:No:01

Set the oven to 180°C (or 160°F if using a fan). As directed on the package, cook the pasta in a big saucepan of boiling salted water. Empty. Grease a big baking dish with a small amount of oil.

Step:No:02

In the interim, warm up some oil in a skillet over medium heat. Add onion and anchovies. Simmer for five minutes, or until tender. Add the garlic and the mushroom. Cook until the mushroom turns golden, about 5 minutes. Stir in 125ml (1/2 cup) water and tinned tomatoes. Simmer until thickened, about 15 minutes.

Step:No:03

Stir in half of the cottage cheese, the rind, and the parsley (save 1 tablespoon). Time of year. Add the tuna and pasta. Discard. Transfer to the ready-made dish. Add the remaining cottage cheese, parmesan, and tomato slices over top. Time of year. Bake until golden, 25 to 30 minutes. Sprinkle the saved parsley over top. Accompany with a salad:
