Best Pizza Capricciosa

 This pizza, which has artichokes, ham, olives, and mushrooms on top along with a tomato pizza sauce, is practically exclusively Australian and quite delicious! This topping combo is very delicious. In particular, the artichokes!

Ingredients:

PIZZA BASE – CHOOSE ONE (NOTE 1):

  1. 1 classic pizza dough (wood-fired Italian style)
  2. 1 fast no-yeast pizza dough (this is excellent!
  3. 1 Store bought (30cm/12")

PIZZA SAUCE:

  1. 1/4 cup tomato paste
  2. 1/4 tsp cooking salt / kosher salt
  3. 1/2 tsp white sugar
  4. 1/2 tbsp water
  5. 1/2 garlic clove , finely minced (optional)
  6. 1/8 tsp EACH dried parsley , basil and oregano (optional)

CAPRICCIOSA TOPPING:

  1. 1 1/3 cup (130 g) mozzarella cheese, freshly shredded (Note 2)
  2. 1/2 cup artichokes from a jar, preferably oil, drained & sliced (Note 3)
  3. 3 button mushrooms , cut into 3 mm / 1/8" slices
  4. 2/3 cup (70 g) shaved leg ham , torn into pieces (thinner is better) (Note 4)
  5. 1/4 cup sliced kalamata olives (or black olives)


Instructions:

Step:No:01

Set the oven's temperature to 250°C/480°F (fan and standard). Give it some time to get really hot!

Step:No:02

Pizza sauce: In a small bowl, combine the ingredients and set aside.

Step:No:03

Pizza foundation: Prepare and unfold your preferred pizza base (do not use a rolling pin!). Then, follow the instructions on the pizza base to stretch it onto a pizza pan or baking tray. (For the pizza stone, note 4)

Step:No:04

Top: Drizzle the pizza with sauce, allowing a 1 centimeter/1/2 inch border all the way around. First, scatter some cheese on top, then haphazardly arrange the ham and garnish with mushrooms, artichoke slices, and olives. (If using the yeast-free pizza base, brush or spray olive oil on the exposed crust.)

Step:No:05

Bake for 10 to 12 minutes, rotating after 4 minutes, or until the crust is crispy and the cheese has golden flecks. Cut and devour immediately!
