Ingredients:

  1. 2 pounds chicken breasts cut into strips (or chicken tenderloins)
  2. Pure olive or avocado oil cooking spray
  3. ½ teaspoon fine sea salt
  4. ¼ teaspoon black pepper
  5. 8 ounces pistachios roasted, salted, shelled (2 Cups)

Grease and set aside two big baking sheets.

Pistachios should be placed in a food processor with the "S" blade attached, or they can be blended or pulsed until they resemble coarse crumbs—just be careful not to puree them. The crushed pistachios should be placed in a small bowl.
