Ingredients:

  1. 1 1/2 tbsp olive oil
  2. 2 garlic cloves , finely minced
  3. 1 onion , finely chopped
  4. 500g/ 1 lb beef mince / ground beef
  5. 2 tsp Italian herbs (Note 1)
  6. 2 tbsp tomato paste
  7. 400g/ 14 oz can crushed tomatoes (or tomato passata)
  8. 1/2 tsp red pepper flakes (chilli flakes, optional)
  9. 1 1/2 tsp cooking salt/kosher salt
  10. 1/2 tsp black pepper
  11. 4 cups (1 L) chicken stock/broth , low sodium (Note 2)
  12. 350g/ 12oz fusilli, penne, elbow macaroni or other short pasta (Note 3)
  13. 3/4 cups thickened / heavy cream

Instructions:

Step No.1

Sauté: In a large pot with a heavy bottom, heat the oil on high heat. Simmer onion and garlic for 1 1/2 minutes.

Step No.2

heat beef and seasonings: Add the beef and heat, stirring occasionally, until the red flesh is all cooked out. To eliminate the raw flavor, add the tomato paste and simmer for one minute after adding the Italian herbs and cooking for 30 seconds.

Step No.3

Crushed tomato, chicken stock, salt, pepper, and red pepper flakes, if using, should all be added. Add the noodles and stir.

Step No.4

Simmer the broth for 15 minutes, stirring periodically during the last few minutes to make sure the pasta doesn't stick to the bottom. Cook the pasta until it's almost done.

Step No.5

Creamy: Simmer for a further one to two minutes after adding the cream. You want it to be sassy, which it will still be! Because pasta absorbs liquid rapidly, when you start eating it, it will still be delicious and gooey.

Step No.6

Take off the stove and serve. Stir well and then transfer to bowls. Garnish with parsley and parmesan.
