Easy pasta primavera

 With a creamy sauce and an abundance of vegetables, our straightforward pasta primavera recipe makes a light and effortless supper for spring or summer.

Ingredients:

  1. 12 ounces pasta (we like penne or bucatini)
  2. 2 tablespoons extra-virgin olive oil
  3. 1 large shallot, thinly sliced
  4. 1 large carrot, cut into matchsticks
  5. 1 medium zucchini, halved lengthwise then cut into ¾-inch-thick slices
  6. 1 medium yellow squash, halved lengthwise then cut into ¾-inch-thick slices
  7. 6 tablespoons unsalted butter, cut into 6 pieces
  8. ¾ cup freshly grated Parmesan cheese, plus more for serving
  9. ½ cup whole milk, plus more as needed
  10. 1 teaspoon dried basil
  11. ½ teaspoon garlic powder
  12. ½ teaspoon sea salt
  13. ½ teaspoon freshly cracked black pepper
  14. ⅓ cup sun dried tomatoes, chopped
  15. 1½ cups halved cherry tomatoes
  16. Chopped fresh basil or flat leaf parsley, for serving (optional)
  17. Crushed red pepper flakes, for serving (optional)




Instructions:

Step:No:01

Over high heat, bring a large pot of salted water to a boil. After adding the pasta, cook it as directed on the package until it's al dente. Empty.

Step:No:02

Meanwhile, place a large pan over medium-high heat with 1 tablespoon of olive oil. Stir the carrots and shallot until they become soft, which should take around five minutes. Move to a platter. In the same skillet, add the remaining 1 tablespoon of olive oil, then swirl to coat the pan. Squash and zucchini should be added in a single layer and cooked for three minutes on each side, or until golden brown. Move to the platter alongside the carrots.

Step:No:03

Use the same skillet to melt the butter. When the butter is melted, whisk in the milk, dried basil, garlic powder, salt, and pepper. Continue whisking until the mixture is smooth. Add the cherry and sun-dried tomatoes, and simmer until thoroughly heated. Take off the heat.

Step:No:04

Add the cooked vegetables and drained pasta to the skillet; toss to coat (see Note).

Step:No:05

If preferred, garnish with fresh basil, crushed red pepper flakes, and extra Parmesan cheese before serving.
