creamy spinach chicken pasta

 Tender chicken, pasta, and fresh baby spinach combine to create a creamy chicken spinach pasta dish! In just 30 minutes, you can have this tasty and cozy dinner recipe ready with a hint of pesto.

Ingredients:

  1. 1 lb penne pasta dry
  2. 1.5 lbs chicken breasts boneless and skinless
  3. 1 tsp salt plus more for chicken
  4. Ground black pepper to taste
  5. 1 tbsp olive oil extra virgin
  6. 2 cups milk whole or 2%
  7. 2 tbsp flour all-purpose, whole wheat or gluten free
  8. 2-3 tbsp cream cheese
  9. 3 tbsp pesto
  10. 4 large handfuls baby spinach
  11. 3 tbsp Parmesan cheese grated
  12. 2 tbsp parsley finely chopped


Instructions:

Step:No:01

Cook pasta according to the package directions, a few minutes underdone, until it's al dente. After draining, set away.

Step:No:02

In the meantime, heat up a large Dutch oven or deep skillet to medium and coat with swirling oil. Chicken breasts should be cooked thoroughly after being seasoned with salt and pepper, added to the saucepan, and cooked for four to five minutes on each side. Transfer to a chopping board, give it some time to settle, and then thinly slice.

Step:No:03

Combine the flour and milk in a small bowl. Add to the pot and boil for about two minutes, or until thickened. Stir in the cream cheese and pesto and heat until the cheese melts.

Step:No:04

Add spinach, cut chicken, and cooked pasta that has been drained. Stir the spinach gently a few times until it wilts.

Step:No:05

Serve right away after adding Parmesan cheese, parsley, and freshly ground black pepper.
