Stuffed Chicken Breast with Spinach

 A family favorite, spinach stuffed chicken breast can be prepared in 30 minutes! It makes a simple, elegant main dish or a speedy dinner on a weeknight!

Ingredients:

  1. 4 large chicken breasts boneless & skinless
  2. 2 tsp smoked paprika
  3. 2 tsp garlic powder
  4. 3/4 tsp salt divided
  5. Ground black pepper to taste
  6. 4 oz cream cheese softened
  7. 1/4 cup Parmesan cheese grated
  8. 1 tbsp mayo
  9. 1 1/2 cups fresh baby spinach finely chopped
  10. 2 large garlic cloves grated
  11. 1/4 tsp red pepper flakes
  12. 2 tbsp oil for frying


Instructions:

Step:No:01

Combine the cream cheese, Parmesan cheese, mayonnaise, garlic, spinach, 1/2 tsp salt, and red pepper flakes in a medium-sized bowl. Using a fork, stir until thoroughly mixed. Put in the fridge.

Step:No:02

Add 1/4 tsp salt, pepper, garlic powder, and smoked paprika to a small bowl. Using a fork, stir, then set aside.

Step:No:03

Cut each chicken breast in half, but not all the way through, to form a pocket, using a sharp filet knife. When unfolded, it resembles a heart. Season both sides with the spices from the previous step.

Step:No:04

 Stuff the spinach mixture inside each breast. It can be fastened using a toothpick.

Step:No:05

Swirl oil to coat and preheat the cast iron skillet over medium-high heat. For five minutes, add the stuffed chicken breasts and simmer. Cook for a further five minutes after carefully flipping and lowering the heat to low. After that, put a lid on and continue cooking until the internal temperature reaches 165°F.

Serve hot or cold, with pan juices on the side.
