A family favorite, spinach stuffed chicken breast can be prepared in 30 minutes! It makes a simple, elegant main dish or a speedy dinner on a weeknight!
Ingredients:
- 4 large chicken breasts boneless & skinless
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 3/4 tsp salt divided
- Ground black pepper to taste
- 4 oz cream cheese softened
- 1/4 cup Parmesan cheese grated
- 1 tbsp mayo
- 1 1/2 cups fresh baby spinach finely chopped
- 2 large garlic cloves grated
- 1/4 tsp red pepper flakes
- 2 tbsp oil for frying
Instructions:

Combine the cream cheese, Parmesan cheese, mayonnaise, garlic, spinach, 1/2 tsp salt, and red pepper flakes in a medium-sized bowl. Using a fork, stir until thoroughly mixed. Put in the fridge.

Add 1/4 tsp salt, pepper, garlic powder, and smoked paprika to a small bowl. Using a fork, stir, then set aside.Step:No:03
Cut each chicken breast in half, but not all the way through, to form a pocket, using a sharp filet knife. When unfolded, it resembles a heart. Season both sides with the spices from the previous step.Step:No:04
Stuff the spinach mixture inside each breast. It can be fastened using a toothpick.

Swirl oil to coat and preheat the cast iron skillet over medium-high heat. For five minutes, add the stuffed chicken breasts and simmer. Cook for a further five minutes after carefully flipping and lowering the heat to low. After that, put a lid on and continue cooking until the internal temperature reaches 165°F.Step:No:06
