Easy chicken quesadillas

 Snacking quesadillas the whole family will love, loaded with melted cheese, leftover rotisserie chicken, and refried beans! really wonderful!

Ingredients:

  1. 1 ½ cups leftover finely shredded rotisserie chicken
  2. 1 ½ cups shredded Mexican blend cheese
  3. ⅓ cup restaurant-style salsa
  4. ¼ cup chopped fresh cilantro leaves
  5. Kosher salt and freshly ground black pepper, to taste
  6. 1 cup refried beans, homemade or store-bought
  7. 16 street tacos flour tortillas, warmed
  8. 3 tablespoons canola oil, divided

FOR SERVING.

  1. 1 cup guacamole
  2. 1 cup pico de gallo
  3. ¼ cup sour cream


Instructions:

Step:No:01

Set oven temperature to 200°F.

Step:No:02

CHICKEN MIXTURE: Toss chicken, cheese, salsa, and cilantro in a medium-sized bowl. Season to taste with salt and pepper.

Step:No:03

Spread refried beans on half of each tortilla, one at a time. Top with CHICKEN MIXTURE and fold over to seal. To create 16 quesadillas, repeat with the remaining tortillas.

Step:No:04

In a big cast-iron skillet, heat up one tablespoon of canola oil over medium-low heat. Working in batches, transfer the quesadillas to the skillet in a single layer and cook for one to two minutes on each side, or until golden brown. You can reheat them in the oven for up to thirty minutes. Continue with the remaining quesadillas and canola oil.
