smashed potatoes recipes

 SUPER CRISPY smashed potatoes with bacon, chives, and sour cream on top. The simplest, most ideal bite-sized snack.

Ingredients:

  1. 2 pounds baby yellow potatoes
  2. Kosher salt and freshly ground black pepper, to taste
  3. 2 tablespoons olive oil
  4. ¾ cup shredded cheddar cheese
  5. 4 slices bacon, diced
  6. ⅓ cup sour cream
  7. 2 tablespoons chopped fresh chives


Instructions:

Step:No:01

Set oven temperature to 450°F. Apply a thin layer of oil or nonstick spray on a baking sheet.

Step:No:02


After placing potatoes in a Dutch oven, add one inch of cold, salted water on top. After bringing to a boil and simmering for approximately 15 minutes, or until just tender, drain thoroughly and allow to cool slightly.

Step:No:03


Put potatoes on the baking sheet that has been prepared. Squash the potatoes gently with a flat, dry measuring cup or glass until they are flattened but remain intact. Apply a layer of olive oil and taste-test salt and pepper for seasoning.

Put in the oven and bake for 25 to 30 minutes, or until crisp and golden brown. Top each potato with cheese; put in the oven and bake for a further two to three minutes, or until the cheese has melted.

Step:No:05

A large cast-iron skillet should be heated to medium-high heat. Add the bacon and cook for 6 to 8 minutes, or until it's crispy and brown. After removing excess fat, place bacon on a dish covered with paper towels.

Step:No:06

Add chives, bacon, and sour cream on the top of each potato.

Serve right away.
