SUPER CRISPY smashed potatoes with bacon, chives, and sour cream on top. The simplest, most ideal bite-sized snack.
Ingredients:
- 2 pounds baby yellow potatoes
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- ¾ cup shredded cheddar cheese
- 4 slices bacon, diced
- ⅓ cup sour cream
- 2 tablespoons chopped fresh chives

Step:No:01
Set oven temperature to 450°F. Apply a thin layer of oil or nonstick spray on a baking sheet.
After placing potatoes in a Dutch oven, add one inch of cold, salted water on top. After bringing to a boil and simmering for approximately 15 minutes, or until just tender, drain thoroughly and allow to cool slightly.
Put potatoes on the baking sheet that has been prepared. Squash the potatoes gently with a flat, dry measuring cup or glass until they are flattened but remain intact. Apply a layer of olive oil and taste-test salt and pepper for seasoning.

Put in the oven and bake for 25 to 30 minutes, or until crisp and golden brown. Top each potato with cheese; put in the oven and bake for a further two to three minutes, or until the cheese has melted.

A large cast-iron skillet should be heated to medium-high heat. Add the bacon and cook for 6 to 8 minutes, or until it's crispy and brown. After removing excess fat, place bacon on a dish covered with paper towels.Step:No:06
Add chives, bacon, and sour cream on the top of each potato.Step:No:07
