Ingredients:

  1. 4 ounces uncooked thick rice noodles
  2. 2 teaspoons canola oil
  3. 1/2 pound pork tenderloin, cut into thin strips
  4. 2 shallots, thinly sliced
  5. 2 garlic cloves, minced
  6. 1 large egg, lightly beaten
  7. 3 cups coleslaw mix
  8. 4 green onions, thinly sliced
  9. 1/3 cup rice vinegar
  10. 1/4 cup sugar
  11. 3 tablespoons reduced-sodium soy sauce
  12. 2 tablespoons fish sauce
  13. 1 tablespoon chili garlic sauce
  14. 1 tablespoon lime juice
  15. 2 tablespoons chopped salted peanuts
  16. Chopped fresh cilantro leaves, lime wedges and fresh bean sprouts


Instructions:

Step:No:01

Saute the noodles.
Follow the instructions on the package to prepare the noodles. When rehydrating them, use totally boiling water and try not to shatter them when you transfer them to a large basin. After the noodles are soft but still slightly firm, remove and dispose of the heated water. To stop the cooking process, rinse the noodles under cold water.
Editor's Tip: To prevent the noodles from clinging to one another, toss them with a little sesame oil if you won't be using them right away.

Sauté the veggies in a stir-fry.
The exciting part is here: stir-frying! Pour the oil into a big wok or nonstick skillet and heat it over high heat. Stir-fry the meat until it gets gently browned after adding it. Take out and place the meat aside. Add the shallot and garlic to the pan without cleaning it out, and heat for about a minute, stirring frequently to prevent the garlic from burning, until it is soft and fragrant. Next, place the egg in the well created in the middle of the onion mixture. Stir-fry the egg for one to two minutes, or until it sets completely.

Finish the meal by adding the sauce.
The dish is almost done from here. Combine the coleslaw mix with the peanuts, lime juice, fish sauce, vinegar, sugar, green onions, and fish sauce. Stir-fry until the coleslaw is wilted and the sauce is just starting to bubble, about 1 minute. Place the pork back in the pan and cook it until it's thoroughly heated. Add the noodles last and cook for a short while to let the flavors meld.
Divide the stir-fry mixture among four bowls. Add bean sprouts, more peanuts, lime wedges, and cilantro as garnish for each dish.
