These crunchy, delicious, and delicate fish patties! They take less than 30 minutes to prepare and are loaded with omega-3s. These patties, with their firm yet flaky structure, are ideal for both special events and weeknight meals!
Ingredients:
- 3 cans salmon
- ½ cup whole wheat breadcrumbs
- ¼ cup onion (finely chopped )
- ¼ cup bell pepper (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 2 large eggs (lightly beaten)
- 2 tbsp olive oil (for frying)

The flaked salmon, breadcrumbs, lemon juice, Dijon mustard, chopped parsley, minced garlic, chopped onion, chopped bell pepper, salt, and black pepper should all be combined in a big bowl. Toss to blend well.

Form the mixture into patties with a thickness of ¼ to ½ inch. For sliders, you can make them smaller, or for regular-sized patties, larger.
