Ingredients

  1. 4 cups shredded chicken
  2. ½ cup mayonnaise
  3. 1 tablespoon Dijon mustard
  4. ½ teaspoon sea salt
  5. ¼ teaspoon freshly cracked black pepper
  6. 1 cup diced celery
  7. ⅓ cup roughly chopped pecans (optional)
  8. 2 tablespoons flat leaf parsley, stems removed and roughly chopped
  9. 1 teaspoon fresh lemon zest
  10. 1 tablespoon fresh lemon juice (from 1 lemon)
  11. 1⅓ cups baby arugula
  12. 8 slices whole wheat or oatmeal bread


Instructions:

Step:No:01

The shredded chicken, mayonnaise, mustard, celery, pecans, parsley, lemon zest, and lemon juice should all be combined in a medium-sized bowl.
