Tamale Casserole Made Easy

 I miss home, and this tamale casserole brings me back. This dish, modified for Hamburger Helper, was a favorite of my mother's. I couldn't find it after moving to a different state, so I made this. Occasionally, my spouse requests that I use a Mexican-style cornmeal mix or add a 14-ounce can of tomatoes and green chiles to spice things up.

Ingredients:


  1. 1 pound ground beef
  2. ½ teaspoon salt
  3. ½ teaspoon ground black pepper
  4. 1 small onion, chopped
  5. (15 ounce) cans pinto beans, rinsed and drained
  6. 2 (15 ounce) cans crushed tomatoes
  7. 1 (15 ounce) can cream-style corn
  8. 1 (6 ounce) box cornbread mix
  9. 1 large egg, lightly beaten
  10. 1 cup shredded Cheddar cheese


Directions:

Step:No:01

Compile every component. Set the oven's temperature to 400°F, or 200°C.

Step:No:02

A cast-iron skillet should be heated to medium-high heat. In a heated skillet, cook and stir ground beef for 5 to 7 minutes, or until browned and crumbly; drain and discard fat. Use black pepper and salt to season beef.

Step:No:03

Cook and mix the onion into the ground beef for one minute over medium heat, then take the skillet off of the burner right away. Add smashed tomatoes and pinto beans and stir.

Step:No:04

Spread the cream-style corn, cornbread mix, and egg mixture over the ground beef mixture in the skillet after thoroughly beating them in a large basin. Add a little cheddar cheese on top.

Step:No:05

Bake for about 25 minutes in a preheated oven, or until cheese is melted and cornbread is firm in the center.
