best chicken fried rice

 Combines leftover rice to make this dish quickly! made with white or brown rice, veggies, eggs, and chicken. AMAZING.

Ingredients:

  1. ⅓ cup oyster sauce
  2. 2 tablespoons rice vinegar
  3. ¼ teaspoon crushed red pepper flakes
  4. 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
  5. Kosher salt and freshly ground black pepper, to taste
  6. 2 tablespoons vegetable oil, divided
  7. 1 small onion, diced
  8. 1 (3.5-ounce) package shiitake mushrooms, stemmed and choppped
  9. 2 medium carrots, diced
  10. 3 cloves garlic, minced
  11. 1 tablespoon freshly grated ginger
  12. ½ cup frozen green peas
  13. 1 tablespoon toasted sesame oil
  14. 4 cups leftover white or brown rice
  15. 3 large eggs, beaten
  16. 2 green onions, thinly sliced
  17. 2 teaspoons toasted sesame seeds


Instructions:

Step:No:01

Mix the rice vinegar, oyster sauce, and red pepper flakes in a small bowl.

Step:No:02

Add 1/4 teaspoon pepper and 1/2 teaspoon salt to the chicken to season it.

Step:No:03

In a big cast iron skillet, heat up 1 tablespoon of vegetable oil over medium-high heat. In batches, put the chicken to the skillet in a single layer and cook for 7 to 8 minutes, or until golden brown; set aside.

To the skillet, add the onion, carrots, and mushrooms. Cook for 3 to 4 minutes, stirring periodically, or until the food is soft.

Add the ginger and garlic, and stir for one minute or until fragrant.

After adding the green peas and stirring for one to two minutes, set them aside.

Sesame oil and the remaining 1 tablespoon of vegetable oil should be heated to medium-high heat.

Evenly distribute the rice. Stirring occasionally, cook for two minutes. Cook for a further two minutes after flipping and spreading in an even layer once more.

Push the rice to one side of the skillet and add the eggs to the other. Cook, stirring frequently, for two to three minutes, or until the eggs are thickened and no liquid is visible.

Step:No:10

After around two to three minutes, thoroughly stir in the chicken, veggies, and oyster sauce mixture. Cook for a further three to five minutes, stirring continuously, or until flavors are well combined.

Step:No:11

If preferred, top with sesame seeds and green onions and serve right away.
