eggs benedict hollandaise

 The BEST eggs benedict dish that you can prepare at home, hands down! Made with the creamiest hollandaise sauce, known as Benedict.

Ingredients:

  1. 1 1/2 tablespoons white vinegar
  2. 8 large eggs
  3. 8 ounces thinly sliced smoked ham
  4. 4 English muffins, split and toasted
  5. 2 tablespoons chopped fresh chives
  6. 2 tablespoons chopped fresh dill

FOR THE HOLLANDAISE SAUCE.

  1. 3 large pasteurized egg yolks
  2. 1 tablespoon freshly squeezed lemon juice
  3. ¼ teaspoon kosher salt
  4. ⅛ teaspoon cayenne pepper
  5. ½ cup unsalted butter, melted


 

Instructions:

Step:NO:01

In a large, shallow saucepan or Dutch oven, heat 3 inches of water and vinegar over medium-high heat. Boil, then lower the heat so that it simmers.

Step:NO:02

Break each egg into a little ramekin or a different bowl. Gently slip each egg into the saucepan while exercising caution.

Step:NO:03

Cook, uncovered, for three to five minutes, or until eggs are cooked through. Gently remove the eggs with a slotted spoon and place them on a platter covered with paper towels.

A big skillet should be heated at medium-high heat. Cook the ham in batches for one to two minutes on each side, or until it is thoroughly cooked and gently browned.

Spread out the English muffins on a dish, open-faced. Evenly top with ham and eggs, pour hollandaise sauce over the tops, and garnish with dill and chives if like.

Serve right away.

In a blender, combine the egg yolks, lemon juice, salt, and cayenne pepper until the mixture turns pale yellow, which should take 30 to 60 seconds. While the motor is running, gradually add butter until it becomes emulsified; adjust the seasoning with salt and pepper to taste.
