Chicken with Creamy Garlic

 Garlic lovers, unite! Serve this flavorful, simple skillet dish of creamy garlic chicken with mashed potatoes or mashed cauliflower. It cooks in a single pan, making cleanup simple as well.

Ingredients:


  1. 1 teaspoon Italian herb seasoning, or seasoning blend of choice
  2. 1/2 teaspoon salt, or to taste
  3. 1/4 teaspoon freshly ground black pepper, or to taste
  4. 1/4 teaspoon granulated garlic
  5. 1/4 cup all-purpose flour
  6. 2 pounds skinless, boneless chicken thighs
  7. 2 tablespoons unsalted butter
  8. 2 tablespoons olive oil
  9. 8 garlic cloves, or more as needed, peeled and smashed, about 1/4 cup lightly packed
  10. 1 cup heavy cream
  11. 1 cup chicken broth1 tablespoon chopped fresh parsley, or as needed (optional)


Directions:

In a one-gallon resealable plastic bag, combine flour, herb seasoning, salt, pepper, and grated garlic.

In a large, nonstick skillet, combine butter and olive oil over medium heat. After using paper towels to pat dry the chicken thighs, throw them in the bag with the seasoned flour, lock it, and toss them until they are uniformly coated.

When the butter stops sizzling, add the chicken pieces and fry for 4 to 5 minutes on each side, or until they are well browned, no longer pink in the center, and the juices flow clear. When placed close to the middle, an instant-read thermometer should read 165 degrees Fahrenheit (74 degrees Celsius). Transfer to a plate and reheat.

In the same skillet, add the mashed garlic. Lower the heat to medium-low and stir the garlic often until it becomes fragrant, which should take no more than a minute.

Stir up any browned bits in the bottom of the pan after adding the cream to the skillet. Add chicken broth and stir. Elevate the temperature to medium and sometimes whisk the sauce while it comes to a boil. Simmer for about ten minutes, or until the sauce has reduced by half.
