This Bowl of Pure Love Is This Marry Me Chicken Soup

 Perhaps you've heard of Marry Me Chicken, which is a delectable dish of sautéed chicken covered in a creamy tomato sauce with sun-dried olive oil that "deserves a marriage proposal!" Serve it over rice or pasta for an extra-hearty supper, or eat it on its own. However, it may also be transformed into an enticing soup in just one pot for the ideal bowl of comfort.

Ingredients:


  1. 1/2 cup drained julienne-cut sun-dried tomatoes packed in oil with herbs (from 1 [8.5-ounce] jar)
  2. 1 tablespoon oil from sun-dried tomato jar, divided
  3. 1 1/2 cups chopped (1/4-inch) yellow onion (from 1 medium [8 ounce] onion)
  4. 4 medium garlic cloves, minced (about 4 teaspoons)
  5. 3 tablespoons tomato paste
  6. 2 (32-ounce) packages chicken broth (8 cups)
  7. 1 cup heavy whipping cream
  8. 4 teaspoons chopped fresh basil, plus more for garnish (optional)
  9. 2 teaspoons kosher salt
  10. 1 1/2 teaspoons dried Italian seasoning
  11. 1 teaspoon garlic powder
  12. 1/4 teaspoon crushed red pepper, plus more for garnish
  13. 8 ounces uncooked medium shell pasta (about 3 cups)
  14. 3 cups (3 ounces) packed roughly chopped fresh baby spinach
  15. 2 cups shredded rotisserie chicken
  16. 8 ounces cream cheese, cubed, at room temperature (about 1 cup)
  17. 1 1/2 ounces Parmesan cheese, finely shredded (about 1/2 cup), plus more for garnish


Directions:

Step:No:01

Compile every component.

Step:No:02

In a large Dutch oven, heat the oil from the sun-dried tomatoes over medium heat until it shimmers. Add the onion and garlic, and simmer for 3 to 4 minutes, stirring frequently, until softened.

Add the tomato paste and sun-dried tomatoes. Cook, stirring constantly, for about 2 minutes, or until the tomato paste has a little deeper red color.

Add the cream, broth, basil, salt, garlic powder, Italian seasoning, and crushed red pepper. Stir and bring to a boil over medium heat, stirring regularly, for approximately 12 minutes.

After adding the pasta, lower the heat to medium-low and cook, stirring often, for about 12 minutes, or until the pasta is al dente.

Turn the heat down to low and add the chicken, spinach, cream cheese, and Parmesan. Cook for about 5 minutes, turning frequently, or until the chicken is thoroughly cooked and the cream cheese and Parmesan have melted.
