Amy's Salad of Barbecued Chicken

 This recipe for barbecue chicken salad is very similar to one at a popular restaurant near my house. I loved it there and decided to make it at home. Now it's one of my favorite salads to make!

Ingredients:

  1. 2 skinless, boneless chicken breast halves
  2. 1 head red leaf lettuce, rinsed and torn
  3. 1 head green leaf lettuce, rinsed and torn
  4. 1 fresh tomato, chopped
  5. 1 bunch cilantro, chopped
  6. 1 (15.25 ounce) can whole kernel corn, drained
  7. 1 (15 ounce) can black beans, drained
  8. 1 (2.8 ounce) can French fried onions
  9. ½ cup ranch dressing
  10. ½ cup barbecue sauce


Directions:

Step:No:01

Set the grill to high temperature and give the grates a quick oiling.

Step:No:02

Grill the chicken for about 6 minutes on each side, or until the juices run clear, over a hot grill. When placed in the center, an instant-read thermometer should read at least 165 degrees Fahrenheit (74 degrees Celsius). Take off the heat, let it cool, then cut.

Step:No:03

Combine the lettuces, black beans, corn, tomato, and cilantro in a big bowl. Add slices of grilled chicken and French-fried onions on top.

Step:No:04

Combine the barbecue sauce and ranch dressing in a small basin. Toss to coat the salad or serve as a side dish for dipping sauce.
