Easy baked feta pasta

 For all of my advice on perfecting this popular dish and making it entirely your own, continue reading:

Ingredients:

  1. 2 pt. cherry or grape tomatoes
  2. 1 shallot, quartered
  3. 3 cloves garlic, smashed 
  4. 1/2 c. extra-virgin olive oil, divided
  5. Kosher salt
  6. Pinch crushed red pepper flakes
  7. 1 (8-oz.) block feta
  8. 3 sprigs fresh thyme 
  9. 10 oz. pasta
  10. Zest of 1 lemon (optional)
  11. Fresh basil, for garnish


Directions:

Step:No:01

Turn the oven on to 400°. Put all the ingredients—except 1 tablespoon oil—into a big ovenproof skillet or medium baking dish along with the shallot and garlic. Add red pepper flakes and salt, then toss to mix.

Step:No:02

After centering the feta in the tomato mixture, pour the remaining 1 tablespoon of oil over it. Arrange sprigs of thyme over tomatoes. Bake for 40 to 45 minutes, or until the feta is golden on top and the tomatoes are exploding.

Step:No:03

 In the meantime, follow the directions on the package to cook the pasta to al dente in a big pot of boiling salted water. Before draining, save a quarter cup of pasta water.

Step:No:04

Add cooked pasta, pasta water that was set aside, and lemon zest (if using) to the skillet that has the tomatoes and feta in it. Stir everything well. Add basil as a garnish.
