This recipe for ground beef and cabbage belonged to my mother. She was, very simply, a country chef. However, looking back, I see that many of the basic dishes mother made at the time were ideal for the occasion, especially now that I have traveled, worked, and tasted food from all over the world. To make a dish truly exceptional, we occasionally need to add love and emotion to it. Accompany with cornbread and cob of corn.
Ingredients:
- 1 large head cabbage, finely chopped
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 onion, halved and thinly sliced
- 1 tablespoon Italian seasoning
- salt and ground black pepper to taste
- 1 pound lean ground beef

In a large pot or Dutch oven over low heat, combine the cabbage, tomatoes with juice, onion, Italian sea
soning, salt, and pepper; cook and stir until it starts to simmer.
