Mexican Casserole with Ground Beef

 I needed something unusual, something I could cook ahead of time if I wanted to, so I came up with this Mexican ground beef casserole. For company, double the recipe!

Ingredients:


  1. 1 pound ground beef
  2. 1 small onion, finely chopped
  3. 1 ½ cups water
  4. ¼ cup salted butter
  5. 1 (6 ounce) package cornbread stuffing mix (such as Stove Top®)
  6. 1 (14.5 ounce) can diced tomatoes with jalapeno
  7. 1 (10 ounce) can diced tomatoes with green chile peppers
  8. 1 tablespoon chili powder
  9. 1 teaspoon ground cumin
  10. ½ teaspoon hot pepper sauce (such as Tabasco®), or more to taste
  11. 1 (8.75 ounce) can sweet corn, drained
  12. 1 cup shredded Cheddar cheese


Directions:

Step:No:01

Set the oven's temperature to 375°F, or 190°C.

Step:No:02

A big skillet should be heated at medium-high heat. In a heated skillet, cook and stir the ground beef and onion for 5 to 7 minutes, or until the beef is browned and crumbly. Grease should be drained and disposed of.

Step:No:03

Prepare the stuffing while the beef is cooking. Put butter and water in a medium saucepan and bring to a boil. Add stuffing mix and cover. Take off the heat. Give it a five-minute rest. Using a fork, fluff.

Step:No:04

Add the spicy sauce, cumin, chili powder, and both cans of chopped tomatoes to the beef mixture. Let it simmer for a duration of two minutes. Add the cheddar cheese and corn. Simmer for one minute or until cheese is completely melted. Move the blend into a casserole dish. Evenly distribute the cornmeal stuffing on top.

Bake for 20 to 30 minutes in a preheated oven, or until golden.
