Baked Schnitzel with Chicken

Making chicken schnitzel in the oven is quite simple. This method is also easy to clean up after and requires less oil. The chicken breasts that have been breaded and baked get crispy and golden on the exterior while remaining moist and soft inside. Serve potato salad in the German style and lemon wedges beside the schnitzels.

Ingredients:

  1. 1 tablespoon olive oil, or as desired
  2. 6 chicken breasts, cut in half lengthwise (butterflied)
  3. salt and ground black pepper to taste
  4. ¾ cup all-purpose flour
  5. 1 tablespoon ground paprika
  6. 2 large eggs, beaten
  7. 2 cups seasoned bread crumbs
  8. 1 large lemon, zested

Directions:

Step:No:01

Compile every component.

Step:No:02

Bake at 425 degrees Fahrenheit (220 degrees Celsius). Drizzle olive oil over aluminum foil that has been lined with a large baking sheet. As the oven heats up, place the baking sheet inside.

Step:No:03

Meanwhile, arrange the chicken breasts on a stable, level surface, sandwiched between two sheets of plastic wrap. Using a meat mallet's smooth side, pound firmly until the meat is 1/4 inch thick. Use salt and pepper to season both sides.

Step:No:04

In a shallow basin, mix together flour and paprika. In another shallow bowl, whisk together eggs, salt, and pepper. In a third shallow bowl, mix together bread crumbs and lemon zest.

Step:No:05

Shake off extra flour after dredging one piece of chicken in it. Dip into the beaten egg. Raise up so that any extra egg falls back into the bowl. Press to cover both sides in bread crumbs. Unstacked, place the breaded chicken on a dish. Continue with the leftover chicken.

Step:No:06

Take out of the oven the baking sheet. On the hot sheet, arrange the chicken in a single layer. Over each piece, drizzle a bit extra olive oil.

Step:No:07

Bake for five to six minutes in a preheated oven. After flipping the chicken, bake it for a further five to six minutes, or until the center is no longer pink and the breading has lightly browned. When placed in the center, an instant-read thermometer should read at least 165 degrees Fahrenheit (74 degrees Celsius).
