This casserole of ground beef and potatoes is a filling dish with a hint of southwestern flavor and a little bite. Our preferred toppings include chopped tomatoes, pickled jalapeños, sour cream, chopped parsley, and pita bread.

Ingredients:


  1. 2 russet potatoes, skin on
  2. 1 tablespoon olive oil
  3. 1 tablespoon unsalted butter
  4. 1 pound ground beef
  5. 1/2 cup diced onion
  6. 2 cloves garlic, minced
  7. 1 (11-ounce) can Mexican-style corn, drained
  8. 3/4 cup chunky salsa
  9. 1/4 cup chicken broth
  10. 2 teaspoons taco seasoning
  11. 2 teaspoons Sriracha, or to taste
  12. salt and ground black pepper to taste
  13. 1 cup shredded Cheddar cheese
  14. 2 teaspoons chopped parsley


Directions:

Step:No:01

Set the oven's temperature to 400°F, or 200°C. Coat a sizable baking dish in olive oil spray.

Step:No:02

Clean potatoes, cut in half lengthwise, and then cut into slices that are 1/4 inch thick. In a large skillet over medium heat, melt butter and oil. Add potatoes and cook, stirring periodically, for 7 to 8 minutes, or until they begin to turn golden brown on all sides. Take out of the skillet and place aside.

Step:No:03

Cook and stir the beef and onion in the same skillet, breaking up the meat, for 4 to 5 minutes, or until the meat is no longer pink. Add the garlic and simmer for approximately a minute, or until fragrant. Remove any remaining fat from the skillet.

Step:No:04

Add corn, salsa, chicken broth, sriracha, taco spice, salt, and pepper and stir. Gently mix the potatoes back into the skillet and simmer them covered for around five minutes. After transferring the beef mixture to the baking dish that has been prepared, equally top with cheese.

Step:No:05

Bake the dish for 10 to 12 minutes, or until the cheese is melted, in a preheated oven. Add parsley as a garnish and serve warm.
