Taquitos made in the air fryer are a quick and simple dinner option. You can use home-cooked chicken, but using shredded rotisserie chicken saves time. Serve with your preferred sides, such as guacamole, sour cream, and Mexican tomato sauce.

Ingredients:


  1. 1 teaspoon vegetable oil
  2. 2 tablespoons diced onion
  3. 1 clove garlic, minced
  4. 2 tablespoons chopped green chiles (such as Ortega®)
  5. 2 tablespoons Mexican-style hot tomato sauce (such as El Pato®)
  6. 1 cup shredded rotisserie chicken
  7. ½ cup shredded Mexican cheese blend
  8. 2 tablespoons Neufchâtel cheese
  9. salt and ground black pepper to taste
  10. 6 corn tortillas
  11. avocado oil cooking spray

In a skillet over medium heat, heat the oil. Add onion and simmer for 3 to 5 minutes, or until tender and transparent. Add the garlic and simmer for one minute or until fragrant. Stir together the Mexican tomato sauce and the green chilies. Add the Neufchâtel cheese, Mexican cheese blend, and the shredded chicken. Simmer and stir for 3 minutes or until cheeses are melted and mixture is well warmed. Add pepper and salt for seasoning.

To make tortillas soft and malleable, heat them in a skillet or straight on the gas stove grates. Put a third of the chicken mixture in the middle of each tortilla. Roll up and fold over to form tacos.

Set an air fryer to 400 degrees Fahrenheit, or 200 degrees Celsius. Taquitos should be arranged in a single layer inside the air fryer basket, not touching, and sprayed with avocado oil.
