curry chicken salad

 This recipe for Curry Chicken Salad is incredibly tasty and healthy. packed with Greek yogurt + olive oil (which serves as a substitute for mayo), seasoned chicken, golden raisins, pistachios, and herbs.

Ingredients:

  1. 1 lb. chicken breasts
  2. 2 teaspoons curry powder (more to taste)
  3. 1 teaspoon garlic powder
  4. 1 teaspoon onion powder
  5. 3/4 cup Greek yogurt
  6. 2 tablespoons olive oil or water
  7. 2 tablespoons honey
  8. 1/4 cup golden raisins
  9. 1/4 cup pistachios
  10. 1/4 cup cilantro and/or parsley
  11. salt and pepper to taste


Instructions:

Step:No:01

To cook the chicken, thinly slice each chicken breast in half horizontally. Onion, garlic, and curry powder should be sprinkled over chicken. Add pepper and salt for seasoning. Drizzle with olive oil and sauté in a nonstick skillet over medium-high heat until cooked through and golden brown. After the chicken has cooled, slice it into little pieces and store it in the refrigerator.

Step:No:02

When the chicken has cooled down enough, combine it with all the other ingredients in a medium-sized bowl to assemble your curry chicken salad. Add extra curry powder, onion powder, garlic powder, and of course salt and pepper to taste. Serve on toast, eggs, greens, wraps, croissants, or, my personal favorite, on an everything bagel.
